Cicero: Real maple syrup in recipe for pie

Barbara of Dexter, N.Y. asked if anyone had a recipe for maple cream pie, made with real maple syrup. Elinor Bradt Posey of Madison, Ala., happily could help. "This recipe, Marshall's Vermont Maple Cream Pie, is from Marshall Faye, the former executive pastry chef at Trapp Family Lodge in Stowe, Vt. It is delicious and was often served in the Tea Room there."

One caution: The recipe uses a lot of real maple syrup, which makes it a pricey pie to make. Make sure you actually enjoy the flavor of real maple syrup.

MARSHALL'S VERMONT MAPLE CREAM PIE

Crust:

1 cup shortening

11/2 cups all-purpose flour

1/2 cup ice water

1/2 teaspoon salt

Filling:

3 eggs

2 cups Vermont maple syrup

1 cup heavy cream

3 tablespoons flour, sifted

Cut the shortening and flour together in a large bowl until it is crumbly
